Abstract
Šampinjoni su jedna od najpoznatijih vrsta jestivih gljiva s vrlo visokom hranjivom vrijednosti. Potiču imunološki sustav prema povećanju proizvodnje proteina, koji imaju ulogu borbe s uzročnicima bolesti. Uzgoj šampinjona obavlja se u zatvorenom prostoru u kojem moraju biti zadovoljeni uvjeti kao što su temperatura, vlaga, čistoća. Proizvodni postupak traje šest tjedana, što omogućava visoku proizvodnost i veći broj obrtaja sredstava. Na temelju internih podataka poduzeća Askus d.o.o. iz Čepina, prikazana i analizirana je struktura troškova u tehnološkom postupku uzgoja šampinjona. Na temelju ukupnih troškova u jednoj obračunskoj godini 1.576.200,00 kn i prihoda 2.126.930,00 kn izračunat je financijski rezultat koji za uzgojnu površinu od 750 m2 iznosi 550.730,00 kn. Cijena koštanja šampinjona je 12,13 kn/kg. Proizvodnja šampinjona je ekonomična uz koeficijent 1,35 i rentabilna sa stopom od 34,91%.

Champignon mushrooms are one of the most famous types of edible mushrooms with high nutritional value. They prompt the immune system to creating more protein, which has the role of fighting causes of diseases. The cultivation of champignons is done in a closed space with conditions such as adequate temperature, humidity, and cleanliness. The procedure lasts for six weeks which enables high efficiency and a bigger turn of resources. Based on the internal data of Askus d.o.o. form Čepin, the structure of expenses in the technological procedure of champignon making has been shown. Based on internal costs in one accrual year 1.576.200,00 kn and income of 2.126.930,00 kn the financial result for the cultivation area of 750 m2 has been calculated as is 550.730,00 kn. The cost of champignons is 12,13kn/kg. The production of champignons is economical with the coefficient of 1.35 and profitable with 34,91%.
