Abstract
Crna slavonska svinja je hrvatska autohtona pasmina te je simbol Slavonije i nizinskog prostora Hrvatske. Pogodna je za ekstenzivan način uzgoja te je skromna u pogledu hranidbe. Cilj ovoga rada je bio utvrditi klaonička svojstva 30 tovljenika crne slavonske svinje u ekstenzivnom načinu uzgoja. U odnosu na plemenite pasmine svinja klaonička svojstva crne slavonske svinje su slabija. U pogledu kakvoće i kvalitete mesa crna slavonska svinja ima bolju kvalitetu mesa od plemenitih pasmina. Upravo zbog specifičnog načina hranidbe i držanja meso je kvalitetnije te je samim time pogodnije za preradu u tradicionalne suhomesnate proizvode. Slavonski kulen je najpoznatiji suhomesnati proizvod mesa crne slavonske svinje.

Black Slavonia pig is an autochthonous Croatian breed and it is the symbol of Slavonia and lowlands of Croatia. This breed is ideal for keeping in extensive conditions also breed is humble in terms of feeding. The aim of this thesis was to determine slaughter traits of 30 black Slavonian pigs fattening in extensive keeping conditions. In regards to modern breeds, carcass traits of Black Slavonian pigs are lower. The meat quality of the Black Slavonia pigs is better than the meat of modern breeds. Precisely because of terms of feeding and the keeping conditions, the meat has the higher quality and therefore it is more suitable for processing in traditional meat products. Slavonian kulen is the most recognizable meat product that derives from the meat of Black Slavonian pig.
