Abstract
U radu je opisano meso općenito, struktura i kemijski sastav mesa, kao i mikroorganizmi koji utječu na kvarenje crvenog mesa, te načini sprječavanja kvarenja mesa i mesnih preraĎevina. Da bi se produţila odrţivost mesa i smanjio rizik od kvarenja neophodna je stalna kontrola proizvodnje i veliki broj modernih metoda koje mogu produţiti trajnost prehrambenih proizvoda što ima izuzetnu vaţnost za ljudsku populaciju.

In this paper, the meat is described in general, structure and chemical composition of meat, as well as microorganisms that affect the deterioration of red meat, as well as ways of preventing spoilage of meat and meat products. In order to prolong the shelf life of meat and reduce the risk of spoilage is necessary constant control of production and a large number of modern methods that can extend the shelf life of food products which is of great significance for the human population
